Black Bean Burger Success

The last time I tried to make black bean burgers, they were tasty but WAY too mushy. Tonight I think I aced the recipe. The secret ingredient: panko (japanese bread crumbs).

Here is a recipe worth sharing. I apologize for the picture quality – I left my memory card at work so these are all from my phone.

Spicy Black Bean Burgers

Ingredients (for 2 burgers)

  • 1 cup black beans
  • 1/2 cup panko bread crumbs
  • 1/2 cup red pepper
  • 1/4 cup onion
  • 1/4 cup zucchini
  • 1 garlic clove
  • spices: Salt, cumin, ground coriander, red pepper flakes, Mrs. Dash Garlic & Herb
  • splash of Frank’s Red Hot Sauce

Directions

  1. Give the veggies and garlic a rough chop.  Place in food processor and pulse until minced.
  2. Mash up black beans in a bowl.
  3. Add veggie mixture, bread crumbs, and spices to black beans.
  4. Stir together.  Using your hands, form patties from the mixture.
  5. Heat a non-stick skillet, sprayed with Pam, on medium-high heat.
  6. Cook burgers until just browned, about 5-7 minutes per side.
  7. Enjoy!  I ate mine on a piece of bread with a smidge of hummus and sprouts.  So good!

I definitely recommend this recipe.

In other news, I finished my swim but it wasn’t easy.  I did 22 lengths (~.68 miles) in just under 30 minutes. I definitely felt slower than I did before my vacation and still had trouble breathing thanks to the cold.  I have faith that I will get my endurance and speed back soon though.
