I had grand plans to bike and swim after work, but unfortunately I had to work late AGAIN. I am on a project that is going to be a ton of work until the end of June. I’m the kind of gal who likes to keep my work hours to 40-45 hours a week. When it creeps up to over 50, I find it hard to get everything on my to-do list done.
Between tri training, taking care of the dog, spending time with friends and family, doing stuff around the house, there are just not enough hours in the day when work gets busy. When I get this busy, cleaning the house is the first thing I fall behind on. What do you “give up” on when you don’t have enough time in your day?
Luckily for me, bike riding to and from work twice a day gives me about an hour of cardio without even trying. Like usual, today I did over 10 miles of riding around. If I don’t have time to exercise it becomes really difficult for me to control my stress. Eating healthy also tops my list.
When I got home I threw a quick meal together, but it was still so good. First up, pesto:
Spinach Pesto
Ingredients
- 3 cups of spinach
- 1 clove of garlic
- 1 tbsp olive oil
- 1 tbsp pine nuts
- pinch of salt
- 1 tbsp Gourmet Garden Herb Blend (Basil) or fresh basil
Directions
- Combine all ingredients into a food processor and pulse for a minute.
- Scrape down the sides and pulse until there are no more large pieces of spinach.

This was the first time I’ve used the Gourmet Garden Basil. As far as I could tell it tasted almost as good as fresh. However, I would prefer a simpler ingredient list.

I used a tablespoon of the pesto (1 weight watchers point) for my gourmet Grilled Veggie, Goat Cheese & Pesto sandwich. I topped Ezekiel bread with some goat cheese, leftover grilled asparagus, eggplant, squash and the pesto. I grilled it in a pan on the stove until the bread was toasted and the cheese melted.

On the side I had steamed broccoli with hot sauce.

I’m waking up early tomorrow to do yoga and get to work before 8 am (ugh). I am DETERMINED to leave by 6 tomorrow so I can finally try out my new bike. I also think I will have time for a swim on the way home from my Dad’s house.

Wow that dinner looks awesome + simple. My two favorites. I love the idea of making spinach pesto. I have kale pesto on my agenda for soon!
Ugh I know that feeling except it’s more often than not my commute that’s messing up my workout plans. 45+ minutes on the metro will sap the energy out of a person.
