Yes, I ate chicken for dinner last night and yes, I liked it.
As you all know, I’m mostly vegetarian but don’t like to put that label on myself in the event that I want meat. Lately I have been craving meat (which never really happened when I ate meat regularly even), so I decided to have chicken for dinner last night.
This recipe used to be a staple of mine, but I hadn’t made it in a few years. I’m pleased to report it is as delicious as ever.
Easy Chicken Cordon Bleu
Ingredients
- 4 chicken thighs or breasts (boneless, skinless)
- 2 slices of Laughing Cow Cheese – I used garlic herb. You can use any kind of cheese here, but this goes really well with the recipe.
- 1 slice of deli ham
- 2 tbsp of bread crumbs
Directions:
- Preheat the oven to 400*.
- Pound chicken into 1/2′’ pieces. To do this, I put one piece of chicken at a time into a plastic bag. Then I use a bottle of olive oil to slam flat.
- Place chicken onto a baking sheet sprayed with non-stick spray.
- Pat down both sides of chicken with a paper towel. Sprinkle with salt and pepper on each side.
- Divide the ham into 4 pieces, and place one on each piece of chicken. Divide each piece of LC cheese into two pieces and place on on each piece of chicken.
- Roll each piece of chicken up and secure with toothpicks.
- Sprinkle 1/2 tbsp of breadcrumbs on each chicken thigh. Spray tops of chicken with non-stick spray.
- Cook for 30-35 minutes. The chicken will come out nice and crispy on the outside, with gooey cheese on the inside.
Note, I still piled my plate with vegetables. Meat will probably never be the star of my meal again.
I don’t have time to calculate the nutritional information before work, but I assure you it is a low calorie, high protein dish.

your comment about not being a vegetarian is interesting to me. i’ve been slowly getting rid of meat in my diet and probably don’t have it but once/twice a week, but i’m not sure i would completely get rid of it after all these months of going without. sometimes i just want a shrimp! or a chicken! i’m a mostly-tarian.
I hear you about meat not being the main star of a meal. Since I’ve been home I’ve stopped eating dairy and have had meat every day. I made sure that my veggies took up most of the plate though – they’re my favorite part of the meal!
Pounding out meat makes it feel SO fancy. I always was so scared to do it until I tried it!
Oooh looks delicious! I always thought Chicken Cordon Bleu was super fattening but I love how you used Laughing Cow. Have you tried any of the new flavors? The mozzarella and sun dried tomato is amazing
