The Return of Soup

Today was a great cardio day for me.  I biked to work and biked to and from home during my lunch break.  The ride home was into the wind and was really tough.  Then after work, I practiced some more exercise commuting.  I ran to my voting booth and cast my ballot for the DC mayoral election.

Then I ran home and picked up the dog and ran around the neighborhood.  Usually she slows me down, but I did 3.11 miles @9:15 pace and 1.89 miles @9:07 pace with the dog, bringing me to my goal for the day of 5 miles.

After my workout I got to work in the kitchen.  I had a huge bag of broccoli from Costco and soup on the mind, and came up with a surprisingly delicious soup. 

I apologize for the camera phone pictures, but since I ran home I couldn’t carry much on me and my camera was left behind at work.  Do not let the bad pictures fool you – this soup is so good!

Creamy Broccoli Soup

Ingredients (4 big servings)

  • 1 tsp olive oil
  • 1 onion
  • 3 cups of broccoli florets
  • 3 cups of chicken or vegetable broth
  • 1/4 cup of flour
  • 1/2 cup of almond milk
  • 4 wedges of garlic & herb laughing cow cheese
  • Salt & pepper

Directions

  1. In a medium saucepan, heat olive oil over medium-high heat.  Sauté onion for about five minutes.IMG_20100914_193031
  2. Add broccoli and chicken broth and bring to a simmer.  Cook for at a simmer for 10 minutes.IMG_20100914_193442
  3. Meanwhile, mix the flour and the milk.IMG_20100914_193830
  4. Once the broccoli is tender, use an immersion blender or food processor to blend the soup.  I prefer to leave some chunks of broccoli.IMG_20100914_194802
  5. Add the flour paste and stir for a few minutes to thicken up the soup.
  6. Drop in cheese.  Make sure the water is not boiling!IMG_20100914_195143
  7. Stir until cheese has melted through.
  8. Add salt and pepper to tasteIMG_20100914_195403

Calories – 119      Total fat – 4.2g     Total carbs – 14.7g    Dietary Fiber – 3.0g     Protein – 6.6g

I ate one serving with a piece of buttered toast for dipping.  I cannot wait to have leftovers for lunch!

  • Ooh I just got an immersion blender for my birthday and I will definitely be trying this soup! I love creamy broccoli soup but it’s always full of too many calories. This one looks amazing :) I just love fall/winter for warm soups and creamy oatmeal.

  • [...] I wish peaches didn’t ripen so quickly because I’m hoarding them whenever  I can find them in the store.  I’m not a fan of the can peaches and as much as I have embraced pumpkin/fall back into my life, I still want my peaches (and the other amazing summer fruits: pineapple, watermelon, nectarines, berries, etc).  I think the fruit is what I miss about the summer months during the cold nasty winter.  Thank goodness I will have plenty of soups and stews to keep me warm and cozy during the long winter months.  I want to make this and this.
