Vegan Banana Nut Bars

I’m feeling the beginning of a cold today, so I’m lucky that I had already planned to work from home.  I plan on resting a lot, some smoothies and maybe making soup.  I started the day with a baking experiment.

Vegan Banana Nut Bars

Ingredients for 8 servings

  • 1 very ripe banana
  • .25 cups agave nectar
  • 1 tsp vanilla
  • 1 cup unsweetened vanilla almond milk
  • 1 cup of old-fashioned oats
  • 1 tsp baking soda
  • .5 cup of flour (I used .25 C whole wheat and .25 C Peanut Butter flour – great combo!)
  • .5 cup nuts of your choice (I used a mix of slivered almonds and chopped walnuts)
  • Optional add-ins: chia seeds, raisins, chocolate chips

Directions

  1. Preheat the oven to 350*.
  2. Put the nuts in a dry, non-stick skillet over medium heat.  Keep on for a few minutes, or until toasted.
  3. Mash the banana in a small bowl.  Add in all the wet ingredients (agave nectar, almond milk, vanilla).
  4. In medium bowl, mix the dry ingredients (flour, baking soda, and oats).
  5. Incorporate the wet ingredients, toasted nuts and any other add-ins to the oat mixture.  I used chia seeds.
  6. Put batter into a greased loaf pan.  Use a spoon to spread batter evenly throughout pan.
  7. Bake for 25 minutes, or until center is cooked through.

I like that these bars are healthy enough to eat for breakfast, but also sweet enough for a dessert.

Points Plus Value: 4 (5 for me because I added .25 cups of chia seeds).
