This Friday is off to a good start – 1 mile swim with Nyema complete! Then I’m off to my first major (in-person) client presentation, so wish me luck.
Since I’ve been trying to up my protein, I decided to experiment in the kitchen and baked these delicious protein muffins. *Note: these are not sweet like a regular muffin, so if you want something along those lines, you should add 1/4 cup of sugar, maple syrup, or honey. They are, however, amazing with a some nut butter or “nut butter frosting” (1 tsp of plain greek yogurt mixed with 1 tsp of nut butter).
Peanut Butter Protein Muffins
Ingredients:
- 1 cup Peanut Flour
- 3 scoops Vanilla Protein Powder (I use Whole Foods’ 365 whey protein powder)
- 1/2 cup natural unsweetened apple sauce
- 2 egg whites
- .25 chopped walnuts
- 2 tbsp chia seeds
- .5 cup of Unsweetened Vanilla almond breeze
- .5 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla extract
- pinch of salt
Directions:
- Preheat the oven to 350*. Mix together flour, protein powder, baking soda, baking powder and salt.
- Add in egg whites, milk, applesauce and vanilla extract until batter is fairly smooth.
- Fold in chia seeds and chopped walnuts.
- Pour evenly into greased, 12 muffin, baking pan.
- Bake for 12-15 minutes, or until you can stick a fork into the center of a muffin and it comes out clean.

Today I had it crumbled into greek yogurt, but my favorite way is definitely with schmear of nut butter.

I love baked goods with peanut flour…and wow do these ever look amazing. Especially after my own AM swim
.
Totally making this recipe ASAP!!! Just simply for more peanut flour usage!
These look AWESOME Liz! I am probably going to steal this recipe… yum!
I never really buy protein powder, but I feel like I need some. It’s a great addition to so many things! Maybe I’ll check out the type you recommended.
I hope the presentation went well!
These sound really good!! I love finding creative ways to get extra protein in. It’s been a long time since I’ve bought protein powder, but I just may need to do that so I can give these a try.
Yum! Protein muffins can be tricky cause a lot of the powders can be SUPER dry (at least the ones I’ve tried baking with)..but these look delicious! Like actual muffins just choc-full of protein.
They look yummy! Love the nut butter frosting idea! And not too many calories. definitely need to try this recipe soon. Thanks sharing!
Mmmm, these look delicious. Just inspired me to make my own PB&J muffins for breakfast!
I bet you rocked the client presentation! And I’m sure each one will get a littler easier
The muffins look so tasty – I definitely prefer less sweet muffins too.
Mmmm this looks so good! I need to get my hands on some peanut flour or PB2!!!!
