Peanut Butter Protein Muffins

This Friday is off to a good start – 1 mile swim with Nyema complete! Then I’m off to my first major (in-person) client presentation, so wish me luck.

Since I’ve been trying to up my protein, I decided to experiment in the kitchen and baked these delicious protein muffins. *Note: these are not sweet like a regular muffin, so if you want something along those lines, you should add 1/4 cup of sugar, maple syrup, or honey. They are, however, amazing with a some nut butter or “nut butter frosting” (1 tsp of plain greek yogurt mixed with 1 tsp of nut butter).

Peanut Butter Protein Muffins

Ingredients:

  • 1 cup Peanut Flour
  • 3 scoops Vanilla Protein Powder (I use Whole Foods’ 365 whey protein powder)
  • 1/2 cup natural unsweetened apple sauce
  • 2 egg whites
  • .25 chopped walnuts
  • 2 tbsp chia seeds
  • .5 cup of Unsweetened Vanilla almond breeze
  • .5 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • pinch of salt

Directions:

  1. Preheat the oven to 350*.  Mix together flour, protein powder, baking soda, baking powder and salt.
  2. Add in egg whites, milk, applesauce and vanilla extract until batter is fairly smooth.
  3. Fold in chia seeds and chopped walnuts.
  4. Pour evenly into greased, 12 muffin, baking pan.
  5. Bake for 12-15 minutes, or until you can stick a fork into the center of a muffin and it comes out clean.

Nutritional Information per serving: Calories – 99    Fat – 4.2g     Carbs – 5.1g     Fiber-1g      Protein-12.5g

Today I had it crumbled into greek yogurt, but my favorite way is definitely with schmear of nut butter.
