It’s Fall Somewhere

Today the temperature in DC was crazy warm for November – I think the high reached almost 70*.  IMG_20111114_104200

This meant two walks with Leela in Rock Creek Park in shorts & a tank top.  Probably the last time I’ll be able to wear that in 2011.

Even though it doesn’t feel like fall today, I already had a fall-type meal planned for dinner.  I made a roasted chicken and garlic mashed potatoes.  I also made this easy and delicious side dish.IMG_3049

Maple-Glazed Winter Vegetables (makes 4-6 servings)

Ingredients:

  • 4 cups chopped winter vegetables (I used one small butternut squash and some brussels sprouts)
  • 2 tablespoons coconut oil
  • 2 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • ¼ cup pecans

Directions:

  1. Melt coconut oil on medium heat.  (You can use butter or other oils instead, but coconut oil adds a little more sweetness)
  2. Add vegetables and a generous pinch of salt to the pan.  Cook for 15-20 minutes, stirring occasionally, until lightly browned and slightly tender.
  3. Meanwhile, mix the syrup, vinegar and brown sugar.  Add mixture to vegetables and cook another 5 minutes or so.
  4. Remove from heat, add pecans and enjoy.IMG_3050
